• ¼ of a 400g cans of cooked chickpeas
• Half an average sized Avocado
• Juice of half a lemon
• Salt & Pepper to taste
• Red Cabbage
• Basil (don’t overdo it)
• Whatever else you like!
1. Mash the chickpeas and avocado together. Don’t blend as it’s better if it still has a little texture.
2. Add the lemon juice, salt & pepper and mix well.
3. Spread evenly on some good quality brown, seeded, granary bread, add toppings and enjoy.
